Purpose

Every bar depends on a position that almost no property defines in writing.   • Teamwork and Communication, four points covering coordination with bartenders, bar servers and the Bar Captain, attendance at the pre shift briefing, immediate reporting of low stock, missing items and guest issues, and assisting other outlets with glassware and supplies when asked.
  • Stock and Store Room, four points covering collection of the daily requisition with items checked against the list, correct storage using first in first out, keeping the store room, cold room and chillers clean, organised and at the right temperature, and assisting with stock counts and monthly inventory.
  • Glassware and Equipment Care, three points covering washing, polishing and storing glassware to reduce breakage and loss, cleaning bar equipment including blenders, shakers, ice machines and coffee machines, and immediate reporting of damaged equipment or broken glass.
  • Hygiene, Safety and Grooming, three points covering food safety, hygiene and sanitation standards under HACCP, safe handling of chemicals, broken glass and heavy items under company safety procedures, and personal grooming with clean uniform on every shift.
  • Events Support, three points covering setup and breakdown of portable bars for banquets, weddings and events, transport of beverages, ice and glassware to event venues according to the BEO, and supporting event bar service with cleanup afterwards.
  • Closing Duties and Handover, three points covering cleaning the bar counter, sinks, floor mats and bins, returning glassware, equipment and stock to storage, and handing over pending tasks and stock notes to the next shift.

Three inclusions show real operational understanding. Checking the requisition against the list at collection is what prevents a shortage being discovered at eight in the evening. First in first out storage is the single discipline that controls beverage spoilage, and it belongs with the person who physically places the stock. And cold room and chiller temperature is placed with the barback rather than left unassigned, which is where it most often falls between roles.

5. Qualifications, performance indicators, and approval

  • Qualifications and requirements, seven points covering education with F&B training noted as an advantage, prior barback, steward or F&B attendant experience as an advantage with fresh graduates welcomed, basic knowledge of bar equipment, glassware and hygiene standards, physical fitness including lifting and standing for long periods, a hardworking and reliable attitude with willingness to learn bartending skills, basic English, and availability for nights, weekends and public holidays.

Stating the physical requirements openly is the right approach for this position. It sets honest expectations and avoids a hire failing within two weeks for a reason that could have been raised at application.

  • Key performance indicators, five measurable standards covering bar readiness and stock levels at opening and during service, glassware cleanliness and breakage levels, bar and store room cleanliness during checks, hygiene and safety compliance, and grooming, attendance and punctuality.

Bar readiness at opening as the first indicator is exactly right, because it is the one measure that captures whether this position is doing its job.
