Purpose
The bar supervisor is the position where beverage cost is actually controlled. Two inclusions are worth drawing attention to. The instruction to work behind the bar during peak hours defines this as a working supervisor rather than an observing one, which is the correct model for a bar and is frequently left ambiguous elsewhere. And the duty to check shift sales, voids and bills in the POS and report variances places revenue verification at the end of every shift rather than at the end of every month, which is when a discrepancy can still be explained.
5. Qualifications, performance indicators, and approval
